Berry Good Jam and Parfait

This recipe came as a stream of consciousness on a Friday morning. Fridays are my day off — a day dedicated to whatever I like: sleeping in, doing my nails, washing my hair, taking a bath, everything shower, going to a spa… Literally utter peace.

So, I woke up on Friday and was craving a yogurt and berry jam parfait, with really good jam. I didn’t have jam, but I had berries from the farmers market and some oranges from the store. So, I went to the kitchen to get started.

As I measured, stirred, and simmered it brought me back to the early days of this blog. About 8 years ago, I was actually a recipe developer for a website, developing 15 recipes a week. It was insane. It was amazing. It was a lot of work.

I was doing this health, wellness, self development, and spiritual coaching on the side.

Now that I am full time in my coaching, I do less things like this for fun.

I develop recipes for clients based on their goals, and that’s fun. It’s not the same though. My content is mainly about teaching or focusing on what will convert and sell. While that is nice to work towards financial stability, I miss the lifestyle shares I used to create. Spontaneously playing around in the kitchen to create recipes like this… Anyway, back to the craving and this simple berry jam.

This is super simple recipe based on things I found in the farmers market.

Berry Good Mixed Berry Parfait

Ingredients:

* 1/2 cup of blueberries

* 1/2 cup of blackberries

* 1/2 cup of raspberries

* 1/4 cup of water

* 1 orange, zested and juiced

* Inch of salt

* Sugar or honey to taste

* Yogurt of your choice

* Granola

Process:

Process:

– Add all ingredients to a pot.

– Heat on medium and bring it to a boil (4-5 minutes).

– Reduce to a simmer, stirring every 5-10 minutes.

– As the berries soften, mash on them.

– After 20-30 minutes, take off the heat.

– Cool for at least 2 hours.

– To make the parfait, add cooled jam to the bottom of a glass. Follow by granola, then yogurt. Keep layering till you fill your glass. Top the parfait with extra jam and a little granola.

– P.S. You can also add the jam to bread with butter, on pancakes, on top of ice cream… the possibilities are endless.
