{"id":2636,"date":"2019-09-12T09:10:21","date_gmt":"2019-09-12T13:10:21","guid":{"rendered":"https:\/\/dejachaniah.com\/test\/?p=2636"},"modified":"2020-03-21T20:32:01","modified_gmt":"2020-03-21T20:32:01","slug":"garbanzo-quinoa-salad","status":"publish","type":"post","link":"https:\/\/dejachaniah.com\/test\/garbanzo-quinoa-salad\/","title":{"rendered":"Garbanzo Quinoa Salad"},"content":{"rendered":"\r\n<p><strong>Ingredients<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>1 lb garbanzo beans, cooked<\/li>\r\n<li>1\/2 lb red quinoa<\/li>\r\n<li>1 large cucumber<\/li>\r\n<li>1 bell pepper<\/li>\r\n<li>1\/2 large carrot<\/li>\r\n<li>1\/2 large onion<\/li>\r\n<li>2 cloves of garlic<\/li>\r\n<li>1 tablespoon tomato paste<\/li>\r\n<li>1 tablespoon white miso<\/li>\r\n<li>2 teaspoons cumin<\/li>\r\n<li>2 teaspoons paprika<\/li>\r\n<li>1 teaspoon oregano<\/li>\r\n<li>3 tablespoons apple cider vinegar<\/li>\r\n<li>4 tablespoons olive oil<\/li>\r\n<li>salt<\/li>\r\n<li>pepper<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>Process<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>Cook quinoa according to packaging instructions. Drain off water. Season with 2 tablespoons of olive oil, salt, 1 teaspoon cumin, and pepper. Set aside and let cool.<\/li>\r\n<li>When it comes to the beans, you can approach it 1 or two ways.<\/li>\r\n<li>Method 1: Soak 1lb dried garbanzos overnight. Rinse them and add to a pot with 4 cups water. Boil for 4 hours or until tender. DO NOT ADD SALT WHILE BOILING. YOUR BEANS WILL ABSORB THAT INSTEAD OF THE WATER AND TAKE LONGER TO COOK.<\/li>\r\n<li>Method 2: Open and drain the liquid off a can of garbanzos beans<\/li>\r\n<li>Finely chop your kale and toss it in a bowl with 3 tablespoons of vinegar. The acid in the vinegar will help break down some toughness in the kale, making it easier to eat.<\/li>\r\n<li>Heat a skillet over medium heat with 2 tablespoons olive oil.<\/li>\r\n<li>Add cooked beans and saut\u00e9e until golden on the outside.<\/li>\r\n<li>Season with 1 tablespoon tomato paste, 1 tablespoon miso, salt, pepper, 2 teaspoons paprika, 1 teaspoon cumin and 1 teaspoon oregano.<\/li>\r\n<li>Add chopped onion, bell pepper, and garlic and cook until all the flavors come together. Let cool.<\/li>\r\n<li>Chop other veggies you may like such as carrots, alfalfa sprouts, and cucumbers like I did.<\/li>\r\n<li>Toss the quinoa, garbanzos and raw veggies, together in the bowl with the kale. Add a bit more seasoning to taste.<\/li>\r\n<li>Can be served warm or cold.<\/li>\r\n<li>Serve to your friends.
