Hey everyone! It’s been a while since I posted, I have been going through a lot of growth.
Most recently, I moved back home to the Caribbean in August and dove deeper into my ancestral medicine. I have spent most of the last few months in the ‘bush’ (in nature) integrating the herbal medicine of my people.
It’s felt soooo good to reconnect in this way. Now, I am ready to share this with you!
We are kicking things off with moringa, an amazing superfood.

Ingredients
- 1/2 lb white quinoa, cooked
- 1 cup fresh moringa leaves
- 1 cup fresh mint leaves
- 1/4 bell pepper, diced
- 1/2 large carrot, diced
- 1/2 large onion, diced
- 3 small radishes, diced
- 2 cloves of garlic
Dressing
- 1 tablespoon peanut butter
- 1 teaspoon hot pepper sauce
- 2 teaspoons chopped ginger
- 1 teaspoon chopped garlic
- 1 teaspoon agave nectar
- 1 teaspoon apple cider vinegar
- 1 teaspoon oil
- salt
- pepper
Process
- Cook quinoa according to packaging instructions. Drain off water. Season with 2 tablespoons of olive oil, salt, and pepper. Set aside and let cool.
- Heat a skillet over medium heat with 2 tablespoons olive oil.
- Add chopped onion, bell pepper, carrots, mushrooms, and garlic and cook until all the flavors come together. Let cool.
- Chop other veggies you may like such as radishes and tomatoes like I did.
- Toss the quinoa, moringa, mint and raw veggies, together in the bowl with the kale. Add a bit more seasoning to taste.
- Can be served warm or cold.
- Serve to your friends. Enjoy!
