I love smoothies. Growing up, I can vividly remember being resentful over my mother feeding me blended fruits and veggies instead of ‘normal’ snacks. Once I realized that a smoothie was literally a blank canvas in a blender, that’s when my dislike faded, appreciation grew and soon became a bit of an obsession. There have been days where I’ve had a different smoothie for every meal, that’s how deep this love runs. I created this recipe one day when I woke up to an immediate feeling of dread and anxiety. After spending some time cleaning the kitchen while venting to my voice memos (my hands-free solution to journaling), I blended together a few of my favorite things and created what I like to call a ‘Bright Eyes‘ Green Smoothie.
Ingredients
1/2 banana
1/3 cup (about 3) strawberries
1/2 cup pineapple
1 handful spinach
1 cup coconut milk or coconut water
1/2 teaspoon turmeric (optional)
1 tablespoon oats (optional)
Process
- Place all desired ingredients in your blender.
- Blend to combine.
- Taste. Adjust as needed.
*TIPS*:
1. Freeze your bananas ahead of time! They help keep the smoothie cold in place of ice cubes and add a soft-serve-like creaminess.
I thought this was heaven! It’s creamy from the frozen banana, refreshing with the coconut milk, and tangy from the pineapple and strawberries. I added the oats and turmeric to make it more suited to my palate that day. The oats bulked it up and kept me full when I had a lot of errands to run. The turmeric added antioxidants and helped to promote detoxification for that inner glow. All in all, delicious stuff 🙂
